<html> <HEAD> <title></title> </HEAD> <body> <H1>Our Wines</h1><br> <h2>2002 Don Miguel Vineyard "Dobles Lias" Chardonnay</h2> <h3>Estate Grown, Estate Bottled</h3> <h4>General</h4> <br> 3,540 bottles produced Suggested retail $40.00 <br> <h4>Why "Dobles Lias"</h4> <br> Dobles Lías means “double lees” in Spanish and it refers to the extended lees contact used for this small bottling of our 2002 Chardonnay. Lees are essentially the yeasts that remain at the bottom of the barrel after finishing the primary fermentation. Extended lees contact, a traditional Burgundian technique used in conjunction with barrel fermentation of Chardonnay, adds richness (texture) and complexity as the yeast cells break down (yeast autolysis) and release amino acids. Lees stirring (bâtonage) is done periodically to contribute complexity. <br> <h4>The Vinification</h4> <br> The grapes were harvested September 11 - 25, 2002, whole-cluster pressed and barrel fermented. Lees were stirred until the malolactic fermentation ended in the spring of 2003. In June we selected twelve barrels and doubled their lees by adding lees from other barrels. The wine remained on its “double lees” until it was bottled, unfiltered, in June 2004 — so total oak aging was 20 months. <br> <h4>The Clones</h4> The twelve barrels selected were from the See, Rued and Spring Mountain clones, of premium French oak. Six were new, from Rousseau Cooperage, and six one-year-old from Vicard and Seguin Moreau. They came from various forests: Nevers, Bertranges, and Allier. <br> <h4>Tasting Notes</h4> This vintage shows expansive tropical fruit of mango, pineapple and coconut, with floral overtones and a creamy texture reminiscent of tapioca pudding. The elegant oak is well integrated and elevates the fruit.
